CAESAR
SALAD a la HUENNEKENS
Start w/
a BIG Wooden Salad Bowl (Crate&Barrel or Williams Sonoma has them)
2 cloves
of garlic (crushed or sliced thin) rub into bowl use wooden spoon
Add 1/2
to 1 cup of your favorite olive oil--salt & pepper rub in bowl
1 tsp.
dry mustard or poupon
3
tbsp.red wine vinegar
Dash of Worcestershire
sauce
2 egg
yolks (raw or coddled)
Squeeze 1
lemon
1/2 to 1
cup parmesan cheese (fresh or from the can)
Add
sliced crisp romaine (use salad spinner to get water out)
Add
croutons
Toss and VOILA,
it's ready.
Have anchovies
on the side if your guests like them.
Add
chicken, sliced tenderloin, grilled shrimp if you like!!!
ENJOY!!!!
This quantity should be sufficient for 8 dinner salads.
